The patties are dry-aged beef, which is the detail that separates this from the fast-food shorthand the word “burger” usually brings to mind. 7Bone started in 2013 as a street-food stall around Southampton, grew into a small restaurant there, and made Bournemouth its second. The branch on Gervis Place — a short step off the Square — still trades on the thing that built the name: loaded, deliberately messy burgers, thick shakes and a menu that refuses to take itself seriously.
The food
Dry-aged beef and free-range chicken anchor the menu, joined by hot dogs, smokehouse BBQ and fried chicken. The plant-based side is the part worth flagging: it runs the full length of the meat one rather than offering a single token patty, so a mixed group can order without anyone drawing the short straw. Expect stacked burgers under blue cheese and bacon jam, tater tots and fries buried in chilli and cheese, and milkshakes that edge towards pudding. Craft beer and cocktails are on hand, and there is a proper kids’ menu. Portions are large and prices sit a notch above the high-street norm, which is the trade for the ageing and the sourcing.
The room
There is no tablecloth and no pretence at one. 7Bone styles the space as a feel-good, speakeasy-ish joint — bare surfaces, painted walls, a soundtrack pitched above conversation — built for eating with your hands over a couple of beers rather than lingering over a long meal. It suits a casual dinner, a group who want something quick and filling, or a solo plate at the counter. Service is fast and unfussy, and nobody rushes you or fusses over you.
Where it is
9 Gervis Place, BH1 2AL, in the town centre a minute from the Square and the top of the Lower Gardens. If you are staying centrally you can walk it in a few minutes, with the seafront downhill from the door. The restaurants hub shows what else is within reach, and the map puts it in context against the rest of the town.
Good to know
Takeaway and Deliveroo both operate if you would rather eat where you are staying. Vegans and vegetarians are catered for in earnest, so a mixed group can order without anyone drawing the short straw. The kitchen currently runs to around 9.30pm Sunday to Thursday and 10pm on Friday and Saturday, though hours shift — check before a late arrival.
