Chez Fred has been frying fish on Seamoor Road since 1989, and three generations of the Capel family have stood at the range in that time. It is the rare chippy that doubles as a proper sit-down restaurant, the rarer one crowned Britain’s best in 1991, and — more than thirty years on — one the Good Food Guide still lists among its hundred best local restaurants. What keeps regulars loyal is simpler than any award: sustainably sourced fish in a light batter, and chips that never run out.
The food
The heart of the menu is cod and haddock, sustainably sourced and fried in a light, airy batter, with a catch of the day chalked up on a specials board when the boats bring in something worth featuring. Fred’s famous golden chips come unlimited if you eat in — ask for more and they keep arriving. There is a children’s menu, the Sprat Pack, for smaller appetites, a vegan banana-blossom “fish” for those who don’t eat the real thing, and gluten-free frying on Tuesdays for coeliacs who otherwise miss out.
The setting
Two sides run from one kitchen: a takeaway counter for chips wrapped to go, and a sit-down restaurant where the fish arrives on a plate with the trimmings. It is unpretentious and family-run to the core, the sort of place where staff know the regulars and the history is on the walls. The 1991 national title and the recent Good Food Guide recognition are earned on consistency rather than reinvention — this is fish and chips done properly, year after year.

Chez Fred is on Seamoor Road in the heart of Westbourne, among the Victorian arcade’s cafés and independents on the western edge of Bournemouth. Good to know
Chez Fred does not take bookings — the restaurant works first come, first served, so arrive early on a Friday or Saturday and be ready for a short wait when it is busy. It opens Tuesday to Saturday for lunch and again in the evening, and closes on Sundays and Mondays. Takeaway and home delivery are both available. Remember that gluten-free is a Tuesday-only service, and check current times before a special trip.
